Leftover Cake?

When I make cakes for birthdays and other celebrations, I usually cut the tops off before I frost them. This is called leveling. Leveling evens out the cake layers and makes frosting and decorating easier. They also look better.

Leveling leaves me with scraps of cake. What to do with them?

Here is one way to use up the leftover bits of cake, and it also uses up any extra frosting too. I got the idea from this site http://www.bakerella.com/

I took the leftover pieces of cake and crumbled it up. Then I added some frosting and mixed it up a bit. I shaped the cake into balls. They kind of look like meatballs here, but it is actually banana cake. I promise!




I coated a mold with melted chocolate and placed a cake ball into each cup.

After the chocolate was set, I popped them out and dipped the tops into melted white chocolate. Can't forget the sprinkles!!


For the next batch, I tinted the white chocolate. More sprinkles!!


So much fun! And no more wasted cake!!

There has been a lot of interest in my baking and photography so I thought I would just combine the two and put it all in one place.

So to start my first post, I bring you.....

Rainbow Cupcakes!

I also have called them Tye Dyed Cupcakes. They are easy to make and are very popular now. Kids love them and I have witnessed actual screams of excitement over them!

It all starts with a white cake. I make the cake from scratch, but you can use a box mix if you want. Once you get the batter made, portion it out into 5 bowls....
Next add your colors. I like to use paste colors. Liquid drops can sometimes thin out the batter more than I like.

I don't use green. When I have used it in the past, the cooked color looked gross to me. I like pretty!

Next you layer the batter into paper lined cupcake pans.


You can swirl the batter, or not.



Bake them up and then check out all the cool patterns you get!




Don't forget the frosting. And all cupcakes need sprinkles!


I love to cut them open to see what patterns I get.


I really have to stop myself from cutting them! I would cut them all!
I have made many many rainbow cakes, in many shapes and sizes. It's all about having fun and making pretty colors!
